Algas La Patrona - (SEAWEED)
(GALICÌA)
Algas La Patrona is located in the vicinity of the Ría do Arousa, a few kilometres from the estuaries where this potent, tasty product grows.
La Patrona offers the finest harvests of these marine vegetables: fresh, nutritious, flavourful.
The seaweed harvested are hyper-functional superfoods, rich in fibre, minerals (iodine, potassium, magnesium, iron, phosphorous, calcium) and vitamins (A, B1, B2, B9, B12, C, E). These seaweeds are also rich in Omega3, and constitute an alternative source of this essential fatty acid, otherwise found in fish.
Committed to the preservation of their natural habitat, La Patrona ensures that their seaweed is harvested
with the utmost respect and care for the environment, its life cycle and its seasonality, thus preserving the sustainability of this important and unique product.
A defining aspect of La Patrona is the contribution Cristina and her team make towards raising awareness of diets that address the dangers of overfishing, the impoverishment of marine fauna and a food culture of abundance that fuel it – an abundance born of a time that no longer exists – a problem as true in the Atlantic as it it is in our oligotrophic Mediterranean.
AIGURA / Cider
(BASQUE COUNTRY)
Agustin Etxeberria, cider master, artisanally processes the different types of apples that are harvested without being frozen and pressed immediately before the juice extracted is placed in steel barrels. Aingura is an organic cider, rendered sparkling with fermentation of the apple must, a unique cuvée made from at least 4 local apple varieties.
VULCANO / Wine

Roncà, located in the eastern area of Verona, draws its remote origins from a warm and vibrant ocean that about 50 million years ago was shaken by three explosive volcanic eruptions, giving us the characteristic mountains that we recognise today as Duello, Calvarina and Crocetta .
An indissoluble bond exists between the women and men of the Zambon family and this land that, into its forth generation of winemakers, arrives in the present with Federico’s personal interpretation of the territory, expressed through his project Vulcano.
